| La tenuta | Creata da Giovanni Boroli e sua moglie Isabella, che si sono trasferiti in Sicilia nel 2004, l’Azienda coltiva principalmente alberi da frutto. Nel 2005 hanno iniziato a piantare 7 ettari di vigneto. Si trovano a un’altitudine compresa tra i 180 e i 250 metri sul livello del mare. Per la precisione, nel comune di Rosolini, nel sud della Sicilia, a cavallo tra le province di Siracusa e Ragusa. Il vigneto di circa 7 ettari è coltivato principalmente con vitigni autoctoni (Grillo, Catarratto, Moscato di Noto, Nero d’Avola, Nero Mascalese). C’è anche una piccola area coltivata a Merlot e Chardonnay. |
| Viticoltura | Certificazione di agricoltura biologica per l’intera tenuta a partire dalla vendemmia 2015. Potatura a guyot con una densità di 5.000 viti per ettaro. Raccolta a mano nell’ultima settimana di agosto. |
| Vinificazione | Pressatura delicata e fermentazione in tini a temperatura controllata. Affinamento in vasche d’acciaio sulle fecce fini per 6 mesi, seguito da 3 mesi di affinamento in bottiglia. La cantina è stata completamente ristrutturata nel 2009. |

| Das Anwesen | Die Azienda wurde von Giovanni Boroli und seiner Frau Isabella gegründet, die 2004 nach Sizilien kam und hauptsächlich Obstbäume anbaut. Im Jahr 2005 begannen sie mit der Anpflanzung von 7 ha Weinbergen. Die Weinberge befinden sich auf einer Höhe von 180 bis 250 m über dem Meeresspiegel. Genauer gesagt in der Gemeinde Rosolini im Süden Siziliens, die zwischen den Provinzen Siracusa und Ragusa liegt. Der Weinberg umfasst etwa 7 Hektar und ist überwiegend mit autochthonen Rebsorten bepflanzt (Grillo, Catarratto, Moscato di Noto, Nero d’Avola, Nero Mascalese). Es gibt auch eine kleine Fläche, die mit Merlot und Chardonnay bepflanzt ist. |
| Weinbau | Das gesamte Weingut ist ab dem Jahrgang 2015 für den biologischen Anbau zertifiziert. Weinberge mit Guyot-Schnitt mit einer Dichte von 5.000 Rebstöcken pro Hektar. Manuelle Weinlese in der letzten Augustwoche. |
