This is an intense, fresh, well-balanced cuvée that deserves your full attention. The balance between acidity and residual sugar is perfect, even at low alcohol levels (11%). Its well-constructed structure, thanks to barrel/vat ageing, combines intense aromas with roundness and complexity. A typical, succulent wine. |

The estate | Founded in 1890 as a family-run business, the estate then covered 4 hectares, and now boasts 38. A century later, Christian Cousin took up the torch. He has developed new working techniques in the vineyard and cellar, as well as exporting his wines abroad. Concerned about the environment, he tried to find optimal solutions to preserve the land. The estate has been HVE level 3 certified since 2019, confirming its determination to move closer to organic farming. |
Viticulture | Several plots aged between 15 and 25 years on schist soils with south-facing exposure. Double Guyot pruning. Traditional general maintenance for all plots, with inter-row grassing. Yields of 25 to 30 hl/ha. Harvesting is manual, with selective sorting and several successive passes. Only botrytized grapes are used in the composition of this Coteaux du Layon. |
Winemaking | The grapes are pressed in a pneumatic press to preserve all the qualities of the juice. After decanting, for alcoholic fermentation, part of the juice is transferred to 400-liter oak barrels, the other part to stainless steel tanks. |
