The estate | Yves-Jean Millaire is a3rd generation winegrower. The story began in 1950 when his grandfather, Jean Garnier, bought 6 ha of vines in Fronsac, on the outskirts of Saint-Émilion. In 1979, the vineyard was leased for 18 years. Jean-Yves took over the family estate in 1998. In 2006, the vineyard was certified organic, and he decided to go even further. In 2009, the estate was certified biodynamic. |
Viticulture | Merlot is planted on 6 ha of predominantly clay soils. Harvesting is mechanical. |
Winemaking | Once pressed, the must undergoes alcoholic fermentation thanks to the action of indigenous yeasts. It is then aged in vats on its fine lees, giving it fullness and roundness. |
Food & wine suggestions | Château Cavale is ideal with grilled meats or cheeses. |
