| The estate |
The Cesconi brothers work a 20-hectare vineyard located in 2 distinct areas: the Pressano mountains at an altitude of 300 meters and the Sarca Valley at 120 meters above sea level. Concerned about their land, they have converted their entire vineyard to organic farming and are now beginning to introduce biodynamic methods. |
| Viticulture |
The grape varieties used to make this cuvée come from the Monts de Pressano at an altitude of 300 meters. The vines face south and south-west. The Chardonnay and Pinot Gris are Guyot pruned (7,000 vines/ha), while the Pinot Blanc is Pergola pruned (4,000 vines/ha). The average age of the vines is 25 years. As each has a different maturity, they are harvested separately. |
| Winemaking |
The grapes are hand-picked, crushed and pressed. The must is decanted for 12 hours before fermentation begins. Each variety ferments separately for around 12 months. Pinot Blanc and Chardonnay in barrels, Pinot Blanc in tuns. A delicate blend of different varieties, aged for 6 months on lees before bottling. |
