Comments A tasty Moulin à Vent masterfully crafted by Richard Rottiers, the appellation’s rising star. Aromas of red and black fruits, well-coated tannins, good volume on the palate and a lingering finish. A precise, full-bodied wine.
The estate Originally from a Chablis winemaking family, Richard Rottiers decided to create the domaine in 2007. He particularly appreciated the wines of Moulin à Vent, and seized an opportunity that presented itself in this appellation. He began by to work 3 ha as a tenant farmer, then launched bottled sales with the 2009 vintage. Respectful of nature, he decided to turn to organic farming. And so, since 2015, the entire 5 ha estate has been certified organic by the Ecocert label.
Viticulture The 4 ha of Gamay that make up this cuvée are spread over 18 parcels, all facing south-east to east. The soils are granite, rich in the Manganese veins typical of Moulin à Vent. The vines range in age from 40 to 80 years. Green harvesting such as disbudding and thinning. Harvesting is also done by hand.
Winemaking Semi-carbonic maceration in whole bunches, followed by light pressing to avoid damaging the berries. Alcoholic fermentation in concrete vats for 14 days, with pumping-over and delestage. Finally, malolactic fermentation, 30% in oak barrels and 70% in concrete tanks. Light filtration and minimal sulfiting. Aged for 6 months before bottling.
