Description | This Cru de Terroir from the province of San Ignacio in Peru is tender, unctuous and totally devoid of acidity and bitterness. Gourmet, it presents delicate floral, honey and ripe fruit notes on a lightly caramelized chocolate background.
Since 2010, this cocoa has been the focus of an exceptional preservation program, thanks to the support of 400 farmer-owners in the region, united around a model post-harvest processing center. After several years of experimentation, a strict fermentation and drying protocol has been developed, enabling the extraordinarily delicate aromas of this unique cocoa to be perfectly expressed. The variety of beans used is Puro Nacional Nativo. The beans are roasted for 48 minutes at 105°C, then conched for 46 hours, and finally matured for 14 days. |

A little history | Situated between the foothills of the Andes and the Amazon, in the extreme north of the country, the province of San Ignacio in the Department of Cajamarca is bordered by the Rio Marañon valley and its steep canyons.
Despite its high altitude, between 1,000 and 1,250 meters, its exceptional microclimate and isolation have enabled the preservation of a cocoa variety long considered extinct: a genetically perfectly pure Nacional. |
