Comments | The aromas of this cuvée are intense and highly complex, with notes of honey, dried fruit, saffron and wax. With its richness and residual sugars, Précieuse Manon is a real wine for laying down. Coteaux du Layon wines have almost unlimited potential. The older the wine, the more succulent it is. Combining it with delicate dishes is a pure delight, but it’s also great on its own for its beautiful aromatic palette. We recommend drinking it well chilled (around 8°C). |

The estate | Founded in 1890 as a family-run business, the estate then covered 4 hectares, and now boasts 38. A century later, Christian Cousin took up the torch. He has developed new working techniques in the vineyard and cellar, as well as exporting his wines abroad. Concerned about the environment, he tried to find optimal solutions to preserve the land. The estate has been HVE level 3 certified since 2019, confirming its determination to move closer to organic farming. |
Viticulture | Several 25-year-old plots on schist soils with south-facing exposure. All plots are maintained in the traditional way, with grass between the rows. Average yield of 18 hl per ha. Harvesting is manual, with selective sorting in several successive passes. As a result, only botrytized bunches, i.e. those affected by noble rot (thanks to the action of the Botrytis Cinerea fungus on the grape skin, which alters the skin to evaporate water from the grape pulp), go into the composition of this Coteaux du Layon. For the latter, the grapes are picked one by one to achieve the highest concentration. |
Winemaking | The grapes are pressed in a pneumatic press to preserve all the qualities of the juice. After decanting for alcoholic fermentation, the juice is transferred to new oak barrels. Aging lasts 36 months before bottling. |
