Beautiful red color with cherry-red highlights. The nose is distinguished by a great aromatic finesse, with subtle notes of red fruit, particularly cherry. On the palate, there are fine woody notes due to its ageing in demi-muids. Well-balanced, with supple tannins, it has a long-lasting finish. A real delicacy to be served with refined dishes or savored on its own to take full advantage of its organoleptic qualities. |
| The estate |
Located in the foothills of the Montagne Noire, a few kilometers north of the city of Carcassonne. The 22-hectare vineyard has been farmed organically since 2010, and 17 hectares biodynamically since 2013. |
| Viticulture |
The grapes for this cuvée come from the Montolieu plateau. 1.15 ha of east-west-facing vines. Hand-harvested around September 7 in 15 kg crates to avoid berry shattering. The vines are 15 years old. |
| Winemaking |
Grapes are sorted and de-stemmed as soon as they arrive at the winery. 50% of the harvest is de-stemmed before vatting, which is carried out by gravity to maintain the quality and integrity of the grapes. Vinification is carried out without any chemical or oenological products. Indigenous yeasts are used. The relatively short maceration lasts 8 days to preserve the delicate aromas of Parti Pris. Finally, the wine is aged for 6 months in 600-liter Stockinger demi-muids before bottling. Parti Pris 2020 is certified Vin Méthode Nature.
