Description

This estate-grown Cru is made exclusively from carefully selected Trinitario beans. Boasting a lovely acidity, it offers a refreshing array of fresh red fruit aromas, including raspberry, cherry, and blackcurrant.

The Bejofo Farm, from which the beans for this chocolate originate, is located in the Sambirano Valley, near Ambanja, in the northwest of the country (Diana region). Since 1920, it has produced some of the most aromatic cocoas in the country. This family farm carefully maintains its heritage of heirloom trees, respecting the principles of organic farming.

The variety of beans used comes from old Trinitario plants. Torrefaction is 52 minutes at 106°C, followed by conching for 72 hours, and finally a maturation period of 14 days.

Store in a dry place, ideally not above 18°C ​​and away from light.
