The 4 hectares of Gamay that make up this cuvée are spread across 18 plots, all facing southeast to east. The soils are granite rich in manganese veins, typical of Moulin-à-Vent. The vines range in age from 40 to 80 years. Green pruning and thinning are carried out. The harvest is also done by hand.

Semi-carbonic maceration of whole bunches followed by gentle pressing to avoid damaging the berries. Alcoholic fermentation then takes place over 14 days in concrete tanks with pump-overs and rackings. Finally, malolactic fermentation occurs, 30% in oak barrels and 70% in concrete tanks. Light filtration and minimal sulfiting. Aged for 6 months before bottling.

Richard Rottiers

Originally from Chablis and from a family of winemakers, Richard Rottiers decided to create the estate in 2007. He particularly appreciates the wines of Moulin-à-Vent and seized an opportunity that presented itself in this appellation. He began by working 3 hectares under a lease agreement and then launched his own bottled wine sales with the 2009 vintage. Respectful of nature, he decided to convert to organic farming. Thus, since 2015, the entire 5-hectare estate has been certified organic by Ecocert.
