Description

A beautiful red wine with cherry-red highlights. The nose is distinguished by its remarkable aromatic finesse, with subtle notes of red fruit, particularly cherry. On the palate, delicate oak notes emerge from its aging in demi-muids. Very well-balanced with supple tannins, it displays a remarkably long finish. A true delight to serve with refined dishes or to enjoy on its own to fully appreciate its organoleptic qualities.

The grapes for this cuvée come from the Montolieu plateau. 1.15 hectares of vines are oriented east-west. The grapes are hand-harvested around September 7th in 15 kg crates to prevent the berries from bursting. The vines are 15 years old.

The grapes are sorted and destemmed upon arrival at the winery. 50% of the harvest is destemmed before being transferred to the vats by gravity to preserve the quality and integrity of the grapes. Vinification is carried out without any chemical or oenological products, using indigenous yeasts. The relatively short maceration lasts 8 days to preserve the delicate aromas of Le Parti Pris. Finally, it undergoes aging for 6 months in 600-liter Stockinger demi-muids before bottling. Le Parti Pris 2020 is certified Vin Méthode Nature.

Domaine de Cazaban

Located on the first foothills of the Montagne Noire, a few kilometers north of the city of Carcassonne. The 22-hectare vineyard has been farmed organically since 2010 and 17 hectares biodynamically since 2013.

Languedoc

Stretching from the Rhône to the foothills of the Pyrenees, Languedoc is one of the largest and oldest wine regions in France. The region benefits from a Mediterranean climate ideal for viticulture. Between the sea and the mountains, its landscapes of garrigue and rolling hills offer an incredible diversity of terroirs.

Long associated with high-volume production, the region is now experiencing a true renaissance in quality. Red grape varieties such as Grenache, Syrah, Mourvèdre, and Carignan produce expressive and sun-drenched wines. For white wines, Grenache Blanc, Vermentino, Marsanne, and Roussanne yield rich, round, and fresh wines.

The winemakers are redoubling their efforts and talent to give these Mediterranean grape varieties their distinctive character across the region's various appellations. They are also producing, with greater creative freedom, fine wines bearing the Pays d'Oc IGP label.
