Several 25-year-old plots on schist soils, facing due south. All plots are managed using traditional methods, including cover cropping between the rows. Average yield is 18 hl per hectare. Harvesting is done by hand with selective sorting during several successive passes. Consequently, only botrytized bunches, affected by noble rot (due to the action of the Botrytis cinerea fungus on the grape skin, causing it to evaporate water from the pulp), are used in the production of this Coteaux du Layon. For this wine, the berries are picked individually to achieve maximum concentration.
