The grape varieties used in this blend come from the Monts de Pressano at an altitude of 300 meters. The vines face south and southwest. The Chardonnay and Pinot Gris are trained using the Guyot system (7,000 vines/ha), while the Pinot Blanc is trained using the pergola system (4,000 vines/ha). The average age of the vines is 25 years. Since each variety has a different ripening period, they are harvested separately.

The grapes are hand-picked, crushed, and pressed. The must settles for 12 hours before fermentation begins. Each variety ferments separately for approximately 12 months. The Pinot Blanc and Chardonnay are aged in barrels, while the Pinot Blanc is aged in large oak casks. The different varieties are then carefully blended and aged for 6 months on their lees before bottling.

Azienda Cesconi

The Cesconi brothers cultivate a 20-hectare vineyard situated in two distinct areas: the Pressano hills at 300 meters altitude and the Sarca Valley at 120 meters above sea level. Committed to their land, they have converted their entire vineyard to organic farming and are now beginning to introduce biodynamic practices.
