It is primarily produced in tanks at low temperatures. Over 50% reserve wines are used. Maturation takes place on the lees in the cellar for approximately fifty months. The dosage is Extra Brut (0 g of sugar).

Billecart-Salmon

It was in 1818, in Mareuil-sur-Aÿ, east of Épernay, that the winery was founded by Nicolas François Billecart and Elisabeth Salmon. Since then, seven generations have perpetuated the family legacy, remaining true to their oath: to prioritize quality and strive for excellence. The estate has committed to an ecological approach by implementing sustainable viticulture and has obtained HVE 3 (High Environmental Value) certification. Since 2018, 100% of the soil amendments used in the vineyard have been organic, and herbicides have been eliminated. Approximately ten hectares are currently undergoing organic conversion.
