Description

Dernier Souffle reveals notes of cherry and violet, typical of the appellation. The tannins are present but already integrate beautifully. Aging in oak barrels adds roundness and smoothness. Already very enjoyable in the glass, it will also benefit from a short stay in the cellar to fully express itself after a few years. A superb single-vineyard cuvée produced on granitic soils, the source of some of the finest expressions of Gamay. This wine is organic.

Le Moulin à Vent Dernier Souffle will perfectly complement grilled meats as well as Beaujolais Andouillettes.

The soils are composed of granite rich in manganese veins. The Gamay vines used for this cuvée cover 0.8 hectares, spread across an east-facing plot. The planting density is 10,000 vines per hectare, and the vines are 60 years old. Green pruning and shoot thinning are carried out. The harvest is exclusively manual.

Semi-carbonic maceration of whole bunches followed by gentle pressing to avoid damaging the berries. Alcoholic fermentation then takes place over 18 days in concrete tanks with pump-overs and rackings. Malolactic fermentation occurs in oak barrels, followed by 8 months of aging. Finally, light filtration through kieselgur (siliceous sedimentary rock) and minimal sulfiting are added before bottling.

Richard Rottiers

Originally from Chablis and from a family of winemakers, Richard Rottiers decided to create the estate in 2007. He particularly appreciates the wines of Moulin-à-Vent and seized an opportunity that presented itself in this appellation. He began by working 3 hectares under a lease agreement and then launched his own bottled wine sales with the 2009 vintage. Respectful of nature, he decided to convert to organic farming. Thus, since 2015, the entire 5-hectare estate has been certified organic by Ecocert.
