Description

This Cru de Terroir from the province of San Ignacio in Peru is tender, smooth, and completely devoid of acidity and bitterness. Rich and indulgent, it offers delicate floral notes, honey, and ripe fruit on a lightly caramelized chocolate base.

Since 2010, this cocoa has been the subject of an exceptional preservation program, thanks to the support of 400 landowners in the region, brought together around a model post-harvest processing center. After several years of experimentation, a strict fermentation and drying protocol has been developed, allowing the perfect expression of the extraordinarily delicate aromas of this unique cocoa.

The variety of beans used is Puro Nacional Nativo. Roasting takes 48 minutes at 105°C, followed by 46 hours of conching and finally a 14-day maturation period.

Conservation

Store in a dry place, ideally not above 18°C ​​and away from light.
