Description

Adolo Ouzo, the "heart of the heart" of Plomari Ouzo, is the unique product of a triple distillation process. It is characterized by its distinctive flavor and a rich bouquet of aromas, distinct from those of classic Plomari Ouzo. Due to its unique distillation method, Adolo is not produced in large quantities. It is a dry Ouzo with an alcohol content of 42%.


Food and wine pairings

Serve with fish mezedes, fried or salted seafood, anchovies, sardines and octopus and a pitcher of water.

The herbs are cultivated in several parts of the island of Lesbos.

This third distillation takes place in a hand-forged copper still from 1911, custom-built for Isidoros Arvanitis. It lasts 13 hours and is carried out over a gentle olive wood fire. Ouzo di Plomari Adolo is the very heart of the distillation. The secret recipe for this ouzo has been passed down through generations, and the proportions have remained unchanged since 1894. To maintain the secrecy in the cellars, only one member of the team knows the herbs and seeds used in the first distillation, and another knows those used in the second.

Isidoros Arvanitis

The Isidoros Arvanitis estate is located in Plomari, on the Greek island of Lesbos. This coastal village has a very long tradition of Ouzo production. Founded in 1894, it perpetuates an artisanal tradition passed down from generation to generation. Thanks to its expertise and the quality of its local ingredients, Isidoros Arvanitis has become an undisputed leader in the production of this iconic Greek spirit.
