Le Réserve is a non-vintage brut champagne. Its subtle and harmonious style captivates from the first sip. Its pale gold color highlights the finesse of its lively bubbles and abundant mousse. Intense, with an ethereal character, its aromatic profile leads us from white stone fruits such as pear, apple, and citrus, to floral flavors and a touch of brioche. A beautiful length on the finish combines freshness and mineral notes.

It is primarily produced in tanks at low temperatures. Over 50% reserve wines are used. Maturation takes place on the lees in the cellar for approximately fifty months. The dosage is Extra Brut (0 g of sugar).
Billecart-Salmon
It was in 1818, in Mareuil-sur-Aÿ, east of Épernay, that the winery was founded by Nicolas François Billecart and Elisabeth Salmon. Since then, seven generations have perpetuated the family legacy, remaining true to their oath: to prioritize quality and strive for excellence. The estate has committed to an ecological approach by implementing sustainable viticulture and has obtained HVE 3 (High Environmental Value) certification. Since 2018, 100% of the soil amendments used in the vineyard have been organic, and herbicides have been eliminated. Approximately ten hectares are currently undergoing organic conversion.

A natural wine is made from organic or biodynamic grapes, harvested by hand and vinified without chemical inputs. No yeast or additives are used, and sulfur is very limited. The wine thus fully reflects the terroir and the winemaker's work.
