Description
The aromas of this vintage are intense and highly complex, with notes of honey, dried fruit, saffron, and beeswax. With its richness and residual sugars, Précieuse Manon is a true wine for aging. The Coteaux du Layon appellation has almost unlimited potential; the older the wine, the more luscious it becomes. Pairing it with delicate dishes is a pure delight, but it also enjoys beautifully on its own, showcasing its lovely aromatic range. It is recommended to serve it well chilled (around 8°C).
Food and wine pairings
The Manon vintage will make a perfect match with blue cheese such as Fourme d'Ambert, foie gras with coarse salt or a fruit tart.

Weinbau
Plusieurs parcelles âgées de 25 ans sur des sols de schiste et exposées plein sud. Entretien général traditionnel pour toutes les parcelles avec également un enherbement de l’inter-rang. Rendement moyen de 18 hl par ha. Les vendanges sont manuelles avec un tri sélectif lors de plusieurs passages successifs. Il n’y a par conséquent que les grappes botrytisées, donc atteintes de pourriture noble (grâce à l'action du champignon Botrytis Cinerea sur la pellicule du grain afin d’altérer celle-ci pour faire évaporer l’eau de la pulpe du raisin), qui rentrent dans la composition de ce Coteaux du Layon. Pour celle-ci, les baies sont ramassées une par une pour avoir une concentration extrême.
Winemaking
The grapes are pressed in a pneumatic press to preserve all the qualities of the juice. After settling, for alcoholic fermentation, the juice is transferred to new oak barrels. Aging then lasts 36 months before bottling.
Domaine de Fiervaux
Das 1890 als Familienbetrieb mit anfänglich vier Hektar gegründete Weingut umfasst heute 38 Hektar. Ein Jahrhundert später übernahm Christian Cousin die Leitung. Er modernisierte die Weinbau- und Weinherstellungstechniken und baute den Export seiner Weine ins Ausland aus. Seinem Engagement für den Umweltschutz verpflichtet, strebt er nach optimalen Lösungen zum Erhalt des Bodens. Das Weingut ist seit 2019 nach HVE-Level 3 zertifiziert und bestätigt damit sein Bekenntnis zu ökologischen Anbaumethoden.
Loiretal
Das Loiretal, das sich von den Hügeln des Zentralmassivs bis zum Atlantik erstreckt, ist das größte Weinanbaugebiet Nordfrankreichs. Als UNESCO-Welterbestätte zeichnet es sich durch die Schönheit seiner Landschaften, seine Schlösser, die Vielfalt seiner Terroirs und die Eleganz seiner Weine aus. Das Klima reicht vom kontinentalen im Osten bis zum maritimen im Westen und bringt so eine bemerkenswerte Vielfalt an Weinen hervor.
Das Loiretal ist das Reich von Chenin Blanc, Sauvignon Blanc und Cabernet Franc, aber es beherbergt auch eine Vielzahl anderer einheimischer Rebsorten wie Melon de Bourgogne, Grolleau und Pineau d'Aunis. Diese Vielfalt spiegelt sich in einem breiten Spektrum an Weinen wider: trockene und spritzige Weißweine, feine und fruchtige Rotweine, zarte Roséweine, elegante Schaumweine und außergewöhnliche Süßweine.

A natural wine is made from organic or biodynamic grapes, harvested by hand and vinified without chemical inputs. No yeast or additives are used, and sulfur is very limited. The wine thus fully reflects the terroir and the winemaker's work.
